- 2 large eggs (separated)

- 1/4 cup strawberries, chopped
- 1 small apple, peeled, cored, and diced
- 1/4 tsp vanilla extract
- Pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C). Grease or line a 5-inch round cake mold with parchment paper.
- In a medium bowl, whisk together almond flour, coconut flour, xanthan gum, baking powder, and a pinch of salt.
- Whip the egg whites in a separate bowl until soft peaks form. Add cream of tartar to stabilize the egg whites.
- In another bowl, mix the egg yolks with melted butter, erythritol, almond beverage, and vanilla extract.
- Fold the wet ingredients into the dry ingredients. Gently fold in the egg whites in batches, being careful not to deflate the batter.
- Once the batter is smooth, fold in the chopped strawberries and apples.
- Pour the batter into the prepared cake mold and smooth the top.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10 minutes in the pan before transferring to a cooling rack. Slice and serve!
