Keto Strawberry Apple Cake (3 Servings)

Ingredients:

  • 1/2 cup almond flour
  • 1 tbsp coconut flour
  • 1/4 tsp xanthan gum (optional, for extra fluffiness)
  • 1/2 tsp baking powder
  • 1/4 tsp cream of tartar
  • 2 tbsp erythritol or preferred sweetener
  • 2 large eggs (separated)
  • 2 tbsp plant butter (melted) or coconut oil
  • 1/4 cup almond beverage (or other plant-based milk)
  • 1/4 cup strawberries, chopped
  • 1 small apple, peeled, cored, and diced
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease or line a 5-inch round cake mold with parchment paper.
  2. In a medium bowl, whisk together almond flour, coconut flour, xanthan gum, baking powder, and a pinch of salt.
  3. Whip the egg whites in a separate bowl until soft peaks form. Add cream of tartar to stabilize the egg whites.
  4. In another bowl, mix the egg yolks with melted butter, erythritol, almond beverage, and vanilla extract.
  5. Fold the wet ingredients into the dry ingredients. Gently fold in the egg whites in batches, being careful not to deflate the batter.
  6. Once the batter is smooth, fold in the chopped strawberries and apples.
  7. Pour the batter into the prepared cake mold and smooth the top.
  8. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for 10 minutes in the pan before transferring to a cooling rack. Slice and serve!

Notes:

  • You can top the cake with extra strawberries or a dollop of whipped coconut cream for decoration.
  • This cake is light, airy, and perfect for a keto-friendly treat, with fruity flavors from the strawberries and apple.
